Ingredients

  • 2 cucumbers diced
  • 2 Roma tomatoes, diced
  • 1/4 red onion diced
  • 2 T avocado oil or olive oil
  • 1 T red wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp Italian seasoning
  • 1 tsp fresh dill
  • 1 tsp sugar optional
  • pepper to taste
  • Other ingredients that would be delightful: cubed avocado, minced garlic, feta cheese, kalamata olives, lemon juice instead of vinegar, roasted red pepper, roasted corn
