Homemade Tortillas

So much better than store-bought tortillas and not hard to throw together at all!

Ingredients

  • 1 1/3 cup warm water
  • 1/4 cup avocado oil
  • 2 tsp salt
  • 1/2 tsp baking powder
  • 3 to 3 1/2 cups all-purpose flour

Instructions

  • In a bowl or with a stand mixer, combine water, salt, oil, baking powder, and 3 cups of the flour. Mix to combine. If you aren’t using a stand mixer, dump contents onto a countertop and knead ingredients together for roughly 5 minutes, adding the extra half cup of flour only as needed. Or with a stand mixer, knead ingredients for 5 minutes only adding {some of} that last 1/2 cup flour if dough is too sticky. Knead until dough forms a smooth elastic ball. 
  • Put the dough into an oiled bowl and cover. Let rest for 30 minutes. 
  • On a floured countertop, divide the dough into 16 even portions. Roll each portion into a ball. 
  • Using a rolling pin or a tortilla press (wishing I had one today!) roll each tortilla as thin as possible. Once you think you have it as thin as it will go, flip it over and roll it out even thinner.
  • In a heated griddle, heat tortillas over medium heat for about a minute on each side.
  • Serve warm if possible. Or just eat as a snack slathered in butter. 🤤
