Mini Meatloaf
- 1-1.5 pounds ground beef
- 1/4 large white onion diced (or 1/2 of a small onion) note: sauté the onion first in a little oil if you have time!
- 1-2 cloves garlic minced
- 1 egg
- 1 Tablespoon ketchup
- 1 teaspoon mustard
- 1 Tablespoon fresh chopped rosemary or 1 teaspoon dried
- 1-2 Tablespoons fresh chopped parsley or 2 teaspoons dried
- 1 tsp Italian seasoning
- 1/4 teaspoon salt or salt to taste
- pepper to taste
- 1 teaspoon Worcestershire sauce
- 1/3 cup grated parmesan cheese
- 1/3 cup unseasoned bread crumbs
Glaze
- 1/3 cup ketchup
- 1 Tablespoon brown sugar
- 1 teaspoon apple cider vinegar
Prevent your screen from going dark
Combine all ingredients. Mix together.
Divide into 6 portions and form into a ball. Make a little indent into the center.
Place balls on a baking sheet lined with parchment paper.
Combine glaze ingredients in a saucepan and cook on low until bubbly. Stir so it won’t burn.
Put a dollop of glaze on the center of each raw meatloaf ball.
Bake at 350 for 25 minutes. Serve hot. Enjoy!
