Add a couple of Tbsp of oil to a large pot, over medium-high heat.
Add the onion, carrots, and celery. Mix evenly while the vegetables cook.
Add the chicken broth, potatoes, and flour. Whisk together.
Cook over medium heat, about 45 minutes, stirring often.
When the potatoes are completely soft, mix in the salt, pepper, and ham.
Take off the heat and add the heavy cream.
