It’s snowing and cold here in south Jordan, so I’m busting out my soup recipes. This Ham and Potato Soup is a family favorite. The recipe is adapted from @cleanmondaymeals, adapting it to a stove top recipe by adding extra broth. (You can use 4 cups broth instead of 8 and cook it in the crockpot- saving the addition of cream for the very end).

Ham and Potato Soup
There's nothing like some creamy tasty soup to warm the heart. This is one of my favorites!

Ingredients
- 2 T oil
- 1 large onion diced
- 4 large carrot sticks chopped
- 4 ribs of celery chopped
- 8 cups chicken broth
- 8 medium russet potatoes chopped
- 1/2 cup flour
- 1 tsp salt
- pepper to taste
- 16 oz ham chopped
- 1 1/2 cups heavy cream
Instructions
- Add a couple of Tbsp of oil to a large pot, over medium-high heat.
- Add the onion, carrots, and celery. Mix evenly while the vegetables cook.
- Add the chicken broth, potatoes, and flour. Whisk together.
- Cook over medium heat, about 45 minutes, stirring often.
- When the potatoes are completely soft, mix in the salt, pepper, and ham.
- Take off the heat and add the heavy cream.
This is a go to soup just as the weather starts to turn! Delicious and hearty!
