Bacon, Spinach, and Poppyseed Salad

Just the yummiest spinach salad ever. No biggie.

Ingredients

Dressing

  • 1 T dehydrated onion flakes
  • 1/3 cup sugar
  • 1 cup oil, (I prefer avocado oil for the mild flavor)
  • 1/2 cup vinegar (red wine or apple cider)
  • 3/4 tsp salt
  • 1/2 tsp dried mustard powder BLEND IN BLENDER, THEN ADD
  • 1 T poppy seeds

Salad

  • 4-5 big handfuls of spinach
  • 1 head iceberg lettuce, washed, dried, and chopped
  • 1/8 red onion, sliced or diced
  • 1/2 to 1 cup bacon, cooked and crumbled
  • 3/4 cup Swiss or mozzarella cheese, grated or cubed
  • 1 cup cottage cheese

Instructions

Dressing

  • Once the poppy seeds are added to the dressing, don’t blend but gently stir them in with a spoon. Add dressing to a jar and refrigerate until you are ready to eat.

Salad

  • Combine spinach, iceberg, and cottage cheese. Toss together with the desired amount of salad dressing, then add salad toppings such as cheese, bacon, and onion. Serve immediately.
