Here’s the yummiest spinach salad everrrrr. Like, I ate it for lunch every day last week and still crave it!
Ingredients
Dressing
- 1 T dehydrated onion flakes
- 1/3 cup sugar
- 1 cup oil, (I prefer avocado oil for the mild flavor)
- 1/2 cup vinegar (red wine or apple cider)
- 3/4 tsp salt
- 1/2 tsp dried mustard powder BLEND IN BLENDER, THEN ADD
- 1 T poppy seeds
Salad
- 4-5 big handfuls of spinach
- 1 head iceberg lettuce, washed, dried, and chopped
- 1/8 red onion, sliced or diced
- 1/2 to 1 cup bacon, cooked and crumbled
- 3/4 cup Swiss or mozzarella cheese, grated or cubed
- 1 cup cottage cheese
Instructions
Dressing
- Once the poppy seeds are added to the dressing, don’t blend but gently stir them in with a spoon. Add dressing to a jar and refrigerate until you are ready to eat.
Salad
- Combine spinach, iceberg, and cottage cheese. Toss together with the desired amount of salad dressing, then add salad toppings such as cheese, bacon, and onion. Serve immediately.
