Combine oats, flour, coconut, brown sugar, salt, and chocolate chips.
In another bowl, combine the melted coconut oil, honey, and vanilla. Stir to combine.
Pour the honey/oil mixture over the oat mixture and toss together until it’s all coated evenly.
Pour contents into a 9x13 inch pan, or a @granolabarpan (if using a granola bar pan, you will have a little extra). Pat down all of the mixture evenly. Bake at 325°F for 30-35 minutes or until it starts to become slightly golden on top.
Remove from the oven and let bars cool completely to set up.
