- 1 tsp coconut oil
- 1/2 yellow onion chopped
- 2 cloves garlic minced
- 1/2 T flour OR 1 T tomato paste to thicken
- 1 1/2 T curry powder
- 1 13.5 oz can coconut milk
- 1 T soy sauce
- 1 T pure maple syrup
- 1/2 tsp salt
Prevent your screen from going dark
In a hot pan, sauté the onion in the oil.
Add the garlic, sauté for another minute then add the flour stirring to combine.
Add the remaining ingredients and simmer for 5 - 10 minutes.
Serve over roasted chickpeas, quinoa, avocado, and spinach.
