Fresh Italian Salad

Here's for all my salad-lovers. The savory salami and parmesan mix perfect with the lemon vinaigrette. I love to mix up my salad routine with this one. Enjoy!

Ingredients

  • Green leaf lettuce (or any lettuce you like)
  • Arugula
  • Cucumber
  • Tomatoes
  • Red onion
  • Pine nuts
  • Black olives
  • Parmesan cheese (or any cheese you like)
  • Salami cut into tiny pieces
  • Optional add-ons: radish, pepperoncini's, artichoke hearts, chopped celery, roasted red pepper

Lemon Vinaigrette Dressing

  • 1/2 cup avocado oil
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • juice of one lemon
  • 1/4 tsp oregano
  • 1/2 tsp mustard
  • 2 T pure maple syrup

Instructions

  •  Mix salad ingredients in a bowl.
  • Blend all dressing ingredients in a high powdered blender or immersion blender.
  • Pour some of the dressing on your salad when you are ready to eat.

Notes

*Leftovers can be stored in a glass jar in the fridge for up to a week. Leftover  dressing may solidify when cold- just let it come to room temp for a little while  first.
