Fresh Italian Salad
Here's for all my salad-lovers. The savory salami and parmesan mix perfect with the lemon vinaigrette. I love to mix up my salad routine with this one. Enjoy!

Ingredients
- Green leaf lettuce (or any lettuce you like)
- Arugula
- Cucumber
- Tomatoes
- Red onion
- Pine nuts
- Black olives
- Parmesan cheese (or any cheese you like)
- Salami cut into tiny pieces
- Optional add-ons: radish, pepperoncini's, artichoke hearts, chopped celery, roasted red pepper
Lemon Vinaigrette Dressing
- 1/2 cup avocado oil
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1/2 tsp salt
- 1/8 tsp pepper
- juice of one lemon
- 1/4 tsp oregano
- 1/2 tsp mustard
- 2 T pure maple syrup
Instructions
- Mix salad ingredients in a bowl.
- Blend all dressing ingredients in a high powdered blender or immersion blender.
- Pour some of the dressing on your salad when you are ready to eat.
Notes
*Leftovers can be stored in a glass jar in the fridge for up to a week. Leftover dressing may solidify when cold- just let it come to room temp for a little while first.
