Combine peanut butter and honey. Mix well.
Then add oats and coconut flakes and mix until well combined.
Dump mixture into a 9x13 inch pan, and with parchment paper, push it down to an even height.
In a microwave-safe bowl combine chocolate chips, vanilla, and coconut oil. Microwave in 30-second increments, stirring in between until it is melted. (Do not overcook! Chocolate burns easily!!)
Pour chocolate over the oat mixture and evenly spread out.
Refrigerate until chocolate hardens, then cut and serve!
