No-Bake Chocolate Coconut Peanut Butter Oatmeal Bars

It's a mouthful...but a really really yummy one.

Ingredients

  • 1 1/2 cups creamy peanut butter
  • 1 cup honey
  • 3 1/2 cups old fashioned oats
  • 3 cups coconut flakes
  • 1 cup chocolate chips
  • 1 1/2 tsp coconut oil
  • 2 tsp vanilla

Instructions

  • Combine peanut butter and honey. Mix well.
  • Then add oats and coconut flakes and mix until well combined.
  • Dump mixture into a 9x13 inch pan, and with parchment paper, push it down to an even height.
  • In a microwave-safe bowl combine chocolate chips, vanilla, and coconut oil. Microwave in 30-second increments, stirring in between until it is melted. (Do not overcook! Chocolate burns easily!!)
  • Pour chocolate over the oat mixture and evenly spread out.
  • Refrigerate until chocolate hardens, then cut and serve!
