No-Bake Chocolate Coconut Peanut Butter Oatmeal Bars
It's a mouthful...but a really really yummy one.

Ingredients
- 1 1/2 cups creamy peanut butter
- 1 cup honey
- 3 1/2 cups old fashioned oats
- 3 cups coconut flakes
- 1 cup chocolate chips
- 1 1/2 tsp coconut oil
- 2 tsp vanilla
Instructions
- Combine peanut butter and honey. Mix well.
- Then add oats and coconut flakes and mix until well combined.
- Dump mixture into a 9x13 inch pan, and with parchment paper, push it down to an even height.
- In a microwave-safe bowl combine chocolate chips, vanilla, and coconut oil. Microwave in 30-second increments, stirring in between until it is melted. (Do not overcook! Chocolate burns easily!!)
- Pour chocolate over the oat mixture and evenly spread out.
- Refrigerate until chocolate hardens, then cut and serve!
These are my new favorite snack! I need to cut them and freeze them, or I’m going to eat the whole pan in one day and not even feel guilty about it!
