Prepare a 9x13 inch baking dish with cooking spray.
Combine crust ingredients and blend with a handheld mixer. The mixture will look very dry and crumbly. When it is mixed thoroughly, use your hands to press it into the bottom of the baking dish.
Bake for 10 minutes, then remove.
Prepare filling ingredients by combining melted butter, pure maple syrup, brown sugar, eggs, heavy cream, and salt. Whisk together, then add pecans and mix.
Pour pecan filling over the pre-baked crust. Use a spoon to separate clumps of nuts. Bake for 25-30 minutes, or until the edges are set. The center will still be a bit jiggly, and the mixture will be bubbling.
Remove from oven and let cool on the counter until no longer warm, (a few hours) then transfer to the fridge.
