Sausage Queso

Warm, mouthwatering sausage queso at your service. And don't think this is only good for dipping chips in!

Ingredients

  • 8 oz. “traditional” or “regular” sausage
  • 1 small or 1/2 large white diced onion
  • 1, 14 oz can diced tomatoes
  • 2 to 4 ounces canned diced jalapeños depending on how hot you want it
  • 8 oz. cream cheese
  • 8 oz. pepper jack cheese grated
  • 1/4 cup milk
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • Pico de Gallo for garnish optional

Instructions

  • In a large frying pan, cook sausage and diced onion together until onion is translucent and sausage is totally cooked through and browned. 
  • Over medium to high heat, add the remaining ingredients and stir to combine until cream cheese and grated cheese are totally melted through. 
  • Serve hot with tortilla chips. Refrigerate any leftovers.
  • ENJOY!

Notes

How do you eat queso anyways?!

The most traditional way to eat this queso is with warm chips! But guys...don't limit your queso possibilities to just chips! There are so many ways to eat this!! 
Cut up veggies, potato wedges, pretzel bites or just pretzels are all amazing ideas for dipping.
You could also pour the queso on burritos, roasted veggies, taquitos or even mix the leftovers in mac n' cheese!
Good old chips and queso will likely never get old for me, but I'm just saying...the sky's the limit here!

Storing Leftovers

You can totally store this in the fridge! You'd be amazed at how many things you can top off with some leftover queso. 
It lasts in the fridge for 4-5 days. Freezer the queso should actually work to, I just recommend separating it into small containers.
