There’s nothing wrong with a mouthwatering side of warm chips and sausage queso, that’s for sure! This is shockingly easy to throw together and so perfectly delicious. Enjoy!

This is shockingly easy to throw together and so perfectly delicious. Enjoy!

LET’S TALK INGREDIENTS

Sausage

For this recipe, you are going to want good old “traditional” or “regular” sausage. Try and avoid any breakfast or maple flavored sausage. 

Onions

The sautéed onions really make a fantastic flavor in this queso. 

If you don’t do onions, try cutting them up super small so they still add that sweet and savory flavor but aren’t as noticeable in your queso. Omitting the onions completely is fine as well.

Cheese

For this recipe I generally use Pepper Jack Cheese.

Pepper jack has a really great spicy kick. If you don’t want to use pepper jack, feel free to swap it for Monterey Jack, Mozzarella, or even Colby jack. 

This recipe also calls for cream cheese. The cream cheese is a non-negotiable ingredient, so don’t skip it! 

Milk

The milk helps smooth out the creamy texture and prevent it from getting too thick. Feel free to swap it for other variations of milk. 

Diced tomatoes

I love to add a can of diced tomatoes. Petite diced tomatoes work great, or even a  cup of fresh diced tomatoes would also work fine. 

Jalapeños

Yes please! The jalapeños add a satisfying kick!

I generally add a can of diced jalapeños, but fresh jalapeños would be fantastic also! If using fresh, remember that the heat is in the seeds, so remove them if you want the dip to be more mild. 

Feel free to substitute the jalapeños for green chilis if you want a little less heat. 

Seasonings

There is already so much flavor in the sausage, but a little bit of cumin and paprika help finish it off. You can also add a little bit of salt and pepper to taste. 

Garnish

Pico de gallo is the perfect garnish for this dish! (homemade pico de gallo recipe here)


How do you eat queso?

The most common way to eat this queso is with some good quality corn tortilla chips! But guys…don’t limit your queso possibilities to just chips. There are so many ways to eat this!

Cut up veggies, potato wedges, pretzel bites or just pretzels are all amazing ideas for dipping.

You could add the queso to burritos, tacos, rice bowls, or use this quest to make an EPIC QUESADILLA! 

Good old chips and queso will likely never get old for me, but I’m just saying…the sky’s the limit here. 

Storing Leftovers

You can store any leftovers in the fridge for 4-5 days.

Warm, mouthwatering sausage queso at your service. And don't think this is only good for dipping chips in!

Ingredients

  • 8 oz. “traditional” or “regular” sausage
  • 1 small or 1/2 large white diced onion
  • 1, 14 oz can diced tomatoes
  • 2 to 4 ounces canned diced jalapeños depending on how hot you want it
  • 8 oz. cream cheese
  • 8 oz. pepper jack cheese grated
  • 1/4 cup milk
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • Pico de Gallo for garnish optional

Instructions

  • In a large frying pan, cook sausage and diced onion together until onion is translucent and sausage is totally cooked through and browned. 
  • Over medium to high heat, add the remaining ingredients and stir to combine until cream cheese and grated cheese are totally melted through. 
  • Serve hot with tortilla chips. Refrigerate any leftovers.
  • ENJOY!

Storing Leftovers

You can totally store this in the fridge! You'd be amazed at how many things you can top off with some leftover queso. 
It lasts in the fridge for 4-5 days. Freezer the queso should actually work to, I just recommend separating it into small containers.
