In a large bowl or mixer, add warm water, yeast, and sugar. Give it a brief mix then cover with a lid or a clean dish towel and let the yeast “poof” (dissolve) for about 10 minutes.
Add the milk, salt, and mix together. Add the flour and mix one cup at a time, mixing/kneading well in between each addition of flour. Be careful not to add too much flour. There will be enough flour when the dough pulls away from the bowl and is elastic and slightly tacky. Knead for 5 minutes in a mixer or 10 minutes by hand.
Cover and let rise for 15-30 minutes. Roll dough into a large flat rectangle and cut into 3-inch squares using a pizza cutter.
