Preheat oven to 400° F.
Scrub potatoes, then rub them with the EVOO.
Put potatoes in a baking dish or cookie sheet and cook in the oven for one hour + fifteen minutes.
Take potatoes out of the oven and cut in half lengthwise. Scoop out as much of the center potato filling as you can.
With the potato filling, add the salt, milk, butter, cheese, bacon, green onions, and cheese. Mix well.
Refill the potato skins with the seasoned potato filling.
Top with a little extra cheese and if you want, garnish with green onions and bacon.
Put them back into the oven for 15 minutes.
Serve hot and enjoy!
