Wash-4-russet-potatoes.-Then-rub
Then-cut-them-in-half
1-teaspoon-salt
Combine-it-all
the-potato-shells
Add-a-lil-mo-cheese-to
bacon-and-green

Twice-Baked Potatoes

Trust me, these are amazing. You will not regret the double-bake!

Ingredients

  • 4 giant russet potatoes
  • 1-2 T extra virgin olive oil
  • 1 tsp salt
  • 1/2 cup whole milk
  • 1/2 cup (one stick) melted butter
  • 2 green onions, sliced
  • 1/2 cup sour cream
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup grated sharp cheddar cheese plus a little more for garnish

Instructions

  • Preheat oven to 400° F.
  • Scrub potatoes, then rub them with the EVOO.
  • Put potatoes in a baking dish or cookie sheet and cook in the oven for one hour + fifteen minutes.
  • Take potatoes out of the oven and cut in half lengthwise. Scoop out as much of the center potato filling as you can.
  • With the potato filling, add the salt, milk, butter, cheese, bacon, green onions, and cheese. Mix well.
  • Refill the potato skins with the seasoned potato filling.
  • Top with a little extra cheese and if you want, garnish with green onions and bacon.
  • Put them back into the oven for 15 minutes.
  • Serve hot and enjoy!
