Twice-Baked Potatoes
Trust me, these are amazing. You will not regret the double-bake!

Ingredients
- 4 giant russet potatoes
- 1-2 T extra virgin olive oil
- 1 tsp salt
- 1/2 cup whole milk
- 1/2 cup (one stick) melted butter
- 2 green onions, sliced
- 1/2 cup sour cream
- 1/2 cup cooked and crumbled bacon
- 1/2 cup grated sharp cheddar cheese plus a little more for garnish
Instructions
- Preheat oven to 400° F.
- Scrub potatoes, then rub them with the EVOO.
- Put potatoes in a baking dish or cookie sheet and cook in the oven for one hour + fifteen minutes.
- Take potatoes out of the oven and cut in half lengthwise. Scoop out as much of the center potato filling as you can.
- With the potato filling, add the salt, milk, butter, cheese, bacon, green onions, and cheese. Mix well.
- Refill the potato skins with the seasoned potato filling.
- Top with a little extra cheese and if you want, garnish with green onions and bacon.
- Put them back into the oven for 15 minutes.
- Serve hot and enjoy!
