Whole Food Peanut Butter Cups

Ingredients

  • 1/2 cup coconut oil melted
  • 1/2 cup peanut butter
  • 1/4 to 1/2 cup unsweetened cocoa powder
  • 1/4 cup pure maple syrup (not pancake syrup)
  • 1 tsp vanilla
  • sprinkling of salt, optional

Instructions

  • Combine ingredients in a large saucepan and heat over the stove until everything is nice and melted. Mix well.
  • Assemble a cupcake/muffin pan with cupcake liners, and pour 1-2 Tablespoons of the mixture into lined muffin tins.
  • If it tickles your fancy, sprinkle the top with coarse sea salt. Freeze for 15 minutes, take out of the freezer, and store in an airtight container in the fridge or freezer.
