Salad
- 1 head kale
- 1-2 ribs celery, finely diced
- 1/2 to 1 cup blueberries
- 1/8 red onion, diced
- 1/2 apple, diced
- 1/4 cup pumpkin seeds or other nuts
Dressing
- 1/3 cup avocado oil or olive oil
- 3 T lemon juice
- 3 T honey
- 1/2 tsp mustard or 1/4 tsp mustard powder
- 1 clove garlic optional
- Blend dressing ingredients with an immersion blender or a whisk.
Prevent your screen from going dark
Remove the center rib from each piece of Kale.
Chop, then massage it well to help remove the bitterness.
Wash and dry. Add to a bowl and toss it with dressing.
