This Chipotle Port Seasoning is out-of-this-world delicious. We can’t wait to make it again! We made taco’s out of the pork and it was amazing. I mixed up the seasoning in a little baggie, and sprinkled about a Tablespoon on top of the pork before I cooked it, then about another teaspoon on after it cooked and shredded. And there’s still leftover seasoning to save for when we make it again.
How I made the pork:
I bought some pork sirloin tip roasts from Costco that came in a 4-pack for $16. Each roast was about 2-2.5 pounds. I put one of those roasts in the Instant Pot. I started by searing the sides of the meat using the sauté function. (Push sauté, add in 1-2 Tablespoons of oil, Then put the meat in the pot and let the meat get a quick 1-2 minute cook on each side.) Then I added 1/2 cups water, pushed the “meat stew” button, sealed the lid, and set for 100 minutes (or if cooking more than one roast, cook for 110 minutes).
It came out perfectly tender and shredable. (Shredable is a new word I just made up. 😜) Make sure you don’t pressure cook it on the “manual” setting or it won’t turn out. I have even tried this from frozen (120 min) and it turned out amazing! If you don’t have an Instant Pot then cook your pork in a crock pot for several hours or until it’s tender and shreds easily. (About 7-8 hours on low or 3-4 hours on high)

Chipotle Pork Seasoning
Ingredients
- 8 tsp salt
- 2 tsp ground black pepper
- 1 T True lime seasoning (lime, garlic, and cilantro flavor)
- 1 tsp dried cilantro
- 1 tsp cumin
- 2 tsp paprika
- 3/4 tsp oregano
- 3 tsp onion powder
- 4 tsp garlic powder
Instructions
- Mix ingredients together and store in a small jar or Ziplock baggie
- Use this to season your meat as needed, generally about 1/2 Tablespoon of seasoning per pound of meat, or to taste.
