CHOCOLATE CHIP BANANA BREAD OR MUFFINS

I have literally been testing and tweaking recipes for months to find my favorite banana bread recipe. And this is it! We LOVE this yummy treat! It can be used to make two small loaf pans (8×3.75×2.75 inches) or 18 muffins.

I have literally been testing and tweaking recipes for months to find my favorite banana bread recipe. And this is it! We LOVE this yummy treat! It can be used to make two small loaf pans (8×3.75×2.75 inches) or 18 muffins.

 

 

Confession: I do not own a loaf pan to bake these in (can’t find one I like in this size) but I find that the disposable, aluminum loaf pans always serve me quite well for this recipe! (I just line them In parchment paper because I’m a weirdo who likes parchment.)They come in the correct size, and bonus- it makes it easy to give away! (8in x 3 3/4 in x 2 3/4 in)

 

Chocolate Chip Banana Bread or Muffins

After testing and tweaking...this is it! Our absolute favorite banana bread (or muffins) recipe!

Ingredients

  • 3/4 cup melted butter
  • 2 eggs
  • 1 cup sugar coconut sugar is great in these
  • 2 T milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 2 cups unbleached, all-purpose flour
  • 3 overripe, mashed bananas
  • 3/4 cup mini chocolate chips, plus more for the top

Instructions

  • Combine butter, eggs, milk, vanilla, and sugar. Mix well to combine.
  • In a separate bowl, combine the flour, salt, baking powder, and baking soda. Whisk to combine and eliminate any lumps.
  • Add 1/2 of the dry ingredients to the wet ingredients, mix until there are no lumps, then repeat with the other 1/2.
  • Add the mashed bananas and chocolate chips, mix gently to combine but don’t over mix. 
  • Fill 2 greased small (not mini size) baking pans or 18 lined muffin tins with the batter. Sprinkle extra chocolate chips on top. 
  • Bake at 350°F for 16-18 minutes for Muffins, or 45 minutes for loaves. Test doneness by inserting a fork or toothpick and looking for only a few crumbs instead of wet batter remaining. 
     
  • Let cool for a few minutes and enjoy!
