Life just isn’t complete without chocolate mint cookies. And they are embarrassingly easy to make. I love to make these Andes Mint Cookies during Christmas time, but honestly they are great for any time of the year. They are chocolatey, soft, and have the most luscious chocolate mint layer melted on top. Add these to your holiday baking (or anytime baking) rotation and they’ll quickly become a family favorite.

The Easiest Cookie Recipe of All Time

This is the simplest cookie recipe that exists. Using a cake mix makes things a breeze. Cake mix contains flour, sugar, salt, and baking powder (and sometimes baking soda as well), which is the foundation of a cookie recipe! Using a cake mix means you don’t have to measure any of those dry ingredients and dirty up any measuring spoons. Simply combine the cake mix with 2 eggs and a melted stick of butter, and voila! You have cookies.

This recipe would be perfect to make with kids. They can pour the cake mix into the bowl and help you crack the eggs. And really they would be doing most of the work, haha!

What’s the Texture of Andes Mint Cookies?

These cookies are a little different from your traditional cookie. They are softer, fluffier, and more airy than most cookies. Ingredients for Andes Mint Cookies

Like I said, this recipe is almost embarrassingly easy. It’s only 3 ingredients for the cookie base. It’s one of those recipes that you’ll make once and you can remember for the rest of your life.

Devil’s Food Cake Mix

The base for this recipe is Devil’s Food Cake Mix. Honestly, you could probably get away with using any type of cake mix. The formula for this recipe really works with all cake mixes.

Eggs

The eggs in this recipe act as a binder and also help these little cookies stay moist and delicious.

Butter

Butter makes everything better! Cake mixes usually call for oil, but we all know that cookies need butter. There’s nothing better than the flavor of butter. You’ll melt the butter for this recipe so that everything combines into a slightly sticky dough.

How to Make Andes Mint Cookies

Combine all of the ingredients together in a bowl. No need to use a mixer for this recipe, though you certainly can. Once combined, the dough will be pretty wet and sticky. That’s okay!

Form the dough into two-tablespoon sized balls. You may want to use a cookie scoop or two spoons to do this, because your hands will get very messy otherwise.

Bake these Andes Mint Cookies at 350 degrees Fahrenheit for 6-8 minutes. That might not seem like a lot of time, but they cook fast. And you definitely do not want to overbake them or else they will become dry and hard.

While the cookies are in the oven, unwrap some Andes mints. That way you can be ready for when they come out of the oven! Right after your timer goes off, pull out the cookies, and place a mint on the top of each cookie. You have to put the mint on top of the cookies while it is still warm so that it melts!

Wait about 10 minutes for the mints to melt, then spread them out with a spatula to create a dreamy chocolatey and minty top.

What Can I Use Instead of Andes Mints?

If you don’t want to use Andes Mints, though I don’t know why you would be here reading this blog post if you didn’t, I would suggest using Rolos, Ghirardelli squares, or even Reese’s Peanut Butter cups in place of the mints.

Andes Mint Cookies

Ingredients

  • 1 Box Devil's Food Cake Mix
  • 2 eggs
  • 1/2 cup butter, melted
  • Andes Mints

Instructions

  • Combine the ingredients in a bowl. Form/scoop into two tablespoon size balls and place on a greased cookie sheet.
  • Bake at 350 for 6-8 minutes.
  • While they are in the oven, unwrap some Andes mints. Right when they come out of the oven, put a mint on each cookie. Wait about 10 minutes for the mints to melt, then spread them out with a spatula. Enjoy!

  1. This my go to when I need a batch of cookies QUICK! I usually make with half on chips/half choc chips. I will be trying this with the Andes Mints. Yum!
