Cilantro Lime Rice
Add some pizzazz to your rice! This lime- and cilantro-infused rice is simply delicious. Enjoy!

Ingredients
- 2 T butter or avocado oil
- 1 small onion diced
- 1 clove garlic minced
- 1 3 oz can diced green chili's
- 2 cups Uncle Ben's parboiled rice
- 1 tsp salt
- chicken stock/broth 2 cups if using instant pot, or 4 cups for stove top
- 1/2 cup chopped cilantro
- juice of one lime
- 2 green onions, chopped
Instructions
Directions for Stove Top
- In a medium pot over medium high heat, melt butter and add the onion.
- Sauté until the onion is soft. Add the garlic and sauté for one more minute.
- Add the green chili's, salt, 4 cups of broth and 2 cups of rice.
- Bring to a boil. Then cover and reduce heat to low and cook for 15- 18 minutes.
- Turn off heat, remove the lid, fluff with a fork, and add cilantro, green onion, and lime juice.
Directions for Instant Pot
- Push "sauté on the Instant Pot. Add the butter/oil and onion.
- Cook, stirring until the onion is soft then add garlic and cook for another minute.
- Add green chili's, 2 cups of broth, and 2 cups of rice, and the salt.
- Seal the lid and push "cancel" (to get it off the sauté function) then press the "rice" button. Let it cook, and when the cooking cycle is complete, let the pressure release naturally (which means, when it's done and it beeps, don't twist the pressure valve to vent) for at least ten minutes.
- Turn the Instant Pot "off", remove the lid, and fluff with a fork. Add cilantro, green onion, and lime juice. Give it a final stir.

I’m having a get together and would like to make your cilantro rice. Have you made it for a crowd? Will it hold up for a buffet style set up or in a crock pot on warm?

Hannah, Yes I have made it for a crowd but I just served it right after cooking. You could do crockpot on warm, but even then sometimes the warm setting gets a little hot, so I’d keep a close eye on it. No problem! Enjoy!
I have tried so many cilantro lime rice recipes and this one is by far the best! It was so easy and delicious and tasted just like the rice from Cafe Rio. I had to make enough for 100 plus people and it was a hit! I can’t wait to have this recipe saved in my kitchen. I’ve been searching years for this and I should’ve come here a long time ago. Amber has done it again with an amazing recipe!
I am getting ready to make this for my daughter’s grad party. I seen you did for a group of 100. Did you do this in a roaster? Or ahead of time in batches? I need to do almost that many servings.
