 Coconut Tres Leches Cake has my whole family like 😍😋😍. This is what my kids request for their birthday cake every year! It is seriously the best cake!

Coconut Tres Leches Cake

Yellow cake but like... 1000X better.

Ingredients

  • 1 box yellow cake mix, plus ingredients called for on the box
  • 1 12 oz can evaporated milk
  • 1 15 oz can cream of coconut
  • 1 cup heavy whipping cream
  • 1-2 cups coconut flakes, toasted (directions below)

Instructions

  • Bake cake in a 9x13 pan according to package directions.
  • Whisk together the heavy cream, cream of coconut, and evaporated milk. 
  • Using a fork, poke holes all over the cake.
  • Pour the cream mixture all over the cake. Don’t fret, some will puddle on the edges and will look like it’s not going to soak through, but it will! 
  • Cover with plastic wrap and refrigerate for several hours. Top cake with about 3-4 cups real whipped cream (no cool whip!) then top with toasted coconut flakes and serve with banana slices or fresh berries.
  • To toast the coconut: Take 1-2 cups of coconut flakes, then put them on a baking sheet lined with parchment paper, and bake at 375°F for 5-8 minutes or until golden and toasted.

  1. Hey Amber. I have a question about the coconut tres leche cake. The whipping cream/coconut cream/evaporated milk mixture has been on the cake for about 10 hours now. It was at least three cups of liquid once I mixed everything together. Some has soaked in but there is still lots pooled all over. The cake is still not visible. Is this right? Do I just need to be more patient? Lol. I’m dying to eat it!

      Hi Alex! Wow that’s a stubborn cake isn’t it! Do you think you poked enough holes in the cake for the liquid to seep in? It also could be the type of cake you used, could it have been more dense? I’m stumped.
