One way I love to eat a sweet potato is loaded up with shredded BBQ chicken, lettuce, tomatoes, avocado, and a drizzle of ranch dressing. Yum!
I cooked the chicken in the #instantpot. I took 3 large, frozen chicken breasts and put them into the instant pot with no water, and about 1 cup of BBQ sauce. Let it cook on manual/high pressure for 24 minutes, with a natural pressure release. Cooks amazingly and shreds so easily!
