FESTIVE FALL COOKIES

I’ve got an amazing fall cookie for you! It’s so yum! Perfect for the 2/3rds of you who don’t like pumpkin, but still love a festive fall cookie!  This cookie is made using a boxed spice cake mix (yup…. and therefore super easy!) and topped with a delicious vanilla buttercream frosting. The cookie is so soft and the frosting is on point!

Festive Fall Cookies

This cookie is perfect for the 2/3rds of you who don’t like pumpkin, but still love a festive fall cookie! So soft and the frosting is on point!

Ingredients

Cookie Ingredients

  • 1 box "spice" cake mix
  • 1 egg
  • 1 stick 1/2 cup salted butter, melted
  • 1 T water

Frosting Ingredients

  • 1 stick 1/2 cup salted butter, at room temp
  • 1 2/3 cups powdered sugar
  • 3 T milk
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350° F and cover a baking sheet with parchment paper. 
  • Combine melted butter, egg, water, and cake mix. Mix with a large spoon. 
  • Form into balls (about two-Tablespoon size), and assemble on a baking sheet. Bake for 8-10 minutes or just until edges are set.
  • Let cookies cool on a baking sheet for about 3 minutes, then transfer to a wire cooling rack.
  • In a medium-sized bowl, beat butter with a handheld mixer until it’s nice and fluffy. About 1 minute. 
  • Add powdered sugar and milk, then mix on medium speed for another 1-2 minutes. Add vanilla.
  • When cookies have cooled, frost with buttercream frosting.
