Reason # 243 why I am obsessed with the instant pot: you can SEAR your chuck roast in the same pot as you cook it. Also, the “meat/stew” setting on the instant pot is likely the BEST KEPT SECRET. It creates the most tender, juicy result in those larger pieces of meat (like this 2.5 lb chuck roast) without having to cook it for 8 hours in the crockpot or the oven.

Servings: 4
Equipment
- Instant Pot
Ingredients
- 2-4 lb chuck roast
- 2 T avocado oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1 T Worcestershire sauce
- 1 T balsamic vinegar
- 12 oz beef broth
- buns
- butter optional
- provolone cheese
- prepared au jus gravy I used a packet since I haven't perfected a scratch recipe yet
Instructions
- Season all sides of the roast with salt, pepper, and garlic powder.
- Push “sauté” on instant pot and add the oil.
- Sear the meat for about 90 seconds per side.
- Add the Worcestershire, vinegar, and broth.
- Close the lid, seal the steam valve and cook on the “meat/stew” setting for 100 minutes (for anything bigger than 4 pounds do 110 minutes, for a frozen roast do 120 minutes).
- After it is done cooking, let it do a natural pressure release for at least 20 minutes before twisting the steam valve to “venting”.
- Shred the meat.
- Butter some buns and broil for 45 seconds.
- Top the bottom bun with meat, then cheese, and broil for another 45 seconds.
- Serve with Au Jus gravy, and if you want to make it next-level, add some sautéed onions and mushrooms. So good!!
I am in love with these sandwiches. I’m going to make them again tomorrow- can you remind me what bread recipe you use when doing homemade? Thanks!

Hi Stacie,I am so glad! I occasionally will make my homemade french bread loaves into smaller hoagie size when making these.
These are so good and so easy!
My family requests this at least once a month! So yummy.
