Ever since I started freezing some sandwiches for my son’s lunch, mornings got so much easier! One of my kids goes to a school that doesn’t provide a lunch option so we send him with a home lunch daily. He is a creature of habit and always asks for a ham sandwich. The problem was that when I bought a package of ham (our preference is the uncured Black Forrest ham from Costco) taking one slice, 5 days a week wasn’t a fast enough use of it since the entire package expired in 10 days once opened. So I decided if I bought a package of ham, and baked a batch of mini-loaves of bread I could knock out two months’ worth of sandwiches, and once frozen, I didn’t have to worry about the ham going rancid.
In the morning I just take one sandwich out of the freezer and put it in his lunch box with a few other sides. The sandwich thaws perfectly in the 3-4 hours until lunchtime.
In the past, I noticed that the mayo, once frozen did seem to change texture and become more oily. (my son never noticed or complained). Now I find that keeping the mayo in between the ham and cheese prevents it from making the bread oily. Of course, mayo can be skipped all together if that’s your preference!
These mini loaves of bread make the perfect size for a child’s lunch!
Make-Ahead Freezer Sandwiches
Ingredients
- bread (I use mini loaves)
- sliced cheese
- sliced ham
- mayo (optional)
- Sandwich bags
Instructions
- Determine how many sandwiches you want to make. Slice double that amount of bread.
- Lay down cheese on every other slice, then mayo on top of the cheese, then ham on top of the mayo.
- Close up the sandwiches and seal them in individual baggies.Keep them in the freezer until ready to use!
