People! Ok, I know I say this often, but trust me! These snickerdoodle blondies are easily one of the best treats I have ever made!
I few years back, I tested several snickerdoodle recipes and most of them were “not bad”. I made a few tweaks and turned them into bars (instead of cookies) and ended up with these! They. Are. *Spectacular*! These are super soft, chewy and delicious! Do you read me? Extra SOFT AND CHEWY. So good. I’m willing to bet this will be your favorite recipe from my page.

Servings: 20 squares
Ingredients
- 3 sticks softened butter (I use salted butter)
- 3 cups brown sugar
- 3 eggs
- 1 1/2 T vanilla
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 3 cups flour
Topping
- 1 tsp cinnamon
- 3 T cane sugar
Instructions
- Preheat the oven to 350°F and grease a 9x13 inch baking dish.
- Whip butter and brown sugar together for 2 solid minutes, using a handheld or stand mixer.
- Add eggs, vanilla, cinnamon, baking soda, and baking powder. Mix well.
- Add flour and gently mix in.
- Add batter to a prepared dish. Spread out as evenly as possible.
- Combine the topping ingredients: sugar and cinnamon and mix together, then sprinkle evenly over the top.
- Bake for about 33 minutes.
- Take out of the oven and resist the urge to dig right in until it has cooled. The edges will have puffed up more than the center. That is perfectly fine. Once it has cooled, it will take on the delicious and chewy texture. Cut into squares and enjoy!

Thanks for pointing this out, McKenzi! I’ve updated the recipe. It should’ve said 3 eggs!

Hi Amber
Love everything you make!!!!!!!!!! Can I use gluten free flour for the snickerdoodles bar?
Hi Devra, I have never tried that. Let me know if you tried it!
Can these be frozen?
Hi Jane, you can freeze these after they are baked and cooled.
