Thank you to my sweet friend @annie.hutchings for sharing her Vegan Cheese Sauce recipe. Neither of us are vegan but we enjoy this sauce all the same! I’m not going to lie to you and tell you that it tastes just like cheese but it’s a yummy sauce that’s good on most things that cheese would be good on. Bonus- it’s full of vegetables and is totally healthy!

Vegan Cheese Sauce
Yes, you read that right. Vegan Cheese Sauce!! No cheese but the same creamy effect. This sauce is totally healthy and amazing on any food that calls for some extra...sauciness. Mmhhmmm.

Ingredients
- 2 cups water
- 1.5 cups chopped potato or sweet potato
- 2 cloves garlic
- 1 cup chopped carrots
- 1/2 onion
- 1/2 cup nutritional yeast
- 1/2 cup cashews (raw or roasted and salted)
- 2 T smoked paprika
- 1.5 T lemon juice
- 1.5 T apple cider vinegar
- salt to taste
Instructions
- Assemble the ingredients and add them to the instant pot.
- Cook on manual for 5 minutes, then do a quick release.
- Add all the cooked ingredients to a blender and blend well for an entire minute until very smooth.
- Serve warm on top of vegetables, with nachos, on eggs, or whatever you want.
