Zoodles with Mushroom Cream sauce is where it’s at! This sauce is amazing and would also be delicious on any other pasta. Also, I feel like it is worth saying that 3 of my 5 kids cannot stand mushrooms. And all 5 of my kids LOVE this sauce. Somehow the yummy creaminess of it helps the mushrooms go down. My husband also likes to eat this sauce plain, with a spoon. (Which…. maybe tells me I should make a soup version of this sauce?) anyway- it’s so good!

Zoodles With Mushroom Cream Sauce
This delicious cream sauce would be amazing on any type of pasta! It's even tested and approved by non-mushroom-lovers.

Ingredients
Sauce Ingredients
- 2 T avocado oil
- 1 cup chopped white onion
- 12 oz sliced mushrooms
- 1 bell pepper diced
- 2 cloves garlic minced
- 1 T butter
- 1/2 tsp salt
- 2 tsp flour
- 2 cups chicken broth
- 1 tsp dried basil
- pepper to taste
- 1/4 cup heavy whipping cream
Zoodle Ingredients
- 1 T avocado oil
- 1/4 cup water
- 4 zucchinis, spiralized
- bacon reserved for topping
Instructions
- Heat oil on a skillet and then add onions, mushrooms, and bell pepper.
- Sauté on medium-high heat for 5-10 minutes or until vegetables are soft and cooked through.
- Once vegetables are soft, add 2 cloves of minced garlic.
- Add butter onto hot skillet and melt into veggies. Then add salt and flour and mix together.
- Pour chicken broth into skillet and cook, stirring often, until it thickens (should take just a few minutes).
- Mix in basil and pepper and continue to stir while it thickens.
- Turn off the heat then add ¼ cup heavy whipping cream.
- Spiralize the zucchini’s.
- In another pan over medium-high heat, put in oil and water. Dump in your zucchini noodles.
- Cook for 4-5 minutes until zucchini is soft.
- Layer the zucchini's, cream sauce, and some bacon.
