Banana Muffins

The perfect reason to let your bananas over-ripen!

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 very ripe bananas, mashed
  • 3/4 cup cane sugar or coconut palm sugar
  • 1 egg beaten
  • 1/3 cup melted butter

Instructions

  • Preheat oven to 350°F and line muffin tins, or spray with non-stick spray.
  • Combine dry ingredients and mix, then add remaining ingredients and whisk together until there are no lumps.
  • Fill muffin tins with batter until 2/3 full. 
  • Bake for 15-18 minutes or until the center is set. Use a toothpick to check center doneness.
