The perfect way to use up your over-ripe bananas! Actually…. these are a perfect reason to let your bananas over-ripen! 😜
Ingredients
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3 very ripe bananas, mashed
- 3/4 cup cane sugar or coconut palm sugar
- 1 egg beaten
- 1/3 cup melted butter
Instructions
- Preheat oven to 350°F and line muffin tins, or spray with non-stick spray.
- Combine dry ingredients and mix, then add remaining ingredients and whisk together until there are no lumps.
- Fill muffin tins with batter until 2/3 full.
- Bake for 15-18 minutes or until the center is set. Use a toothpick to check center doneness.
