Breakfast Burritos For Camping

Our go-to camping breakfast! They are delicious and hearty, and easy to cook near a fire. Takes just a little bit a prep time that you won't regret.

Ingredients

  • 8 large tortillas
  • 1 pound traditional sausage, cooked and crumbled
  • 12 eggs scrambled
  • 2 1/2 cups hashbrowns
  • 2 cups shredded cheese
  • heavy duty aluminum foil, ripped into rectangles

Instructions

  • Scramble the eggs, but undercook them slightly (unless you are eating the burritos immediately).
  • Assemble the tortillas! Each tortillas has:
    1/3 cup cooked sausage
    1/3 up cooked hash browns
    1.5 eggs, scrambled (about 1/3 cup)
    1/4 cup grated cheese
  • Roll each tortilla into a burrito and wrap tightly in aluminum foil.
  • Freeze the burritos and then keep them in coolers while camping. Reheat them on the camp stove or near the fire!

      Emily, I love to reheat them next to the fire if we are camping. If you are home you can pop them into the oven at 350°F for 30 min.:)
