I love a good cheeseburger and this soup to me is cheeseburger in comfort food form. It’s good on it’s own, and it’s unique with the quirkiness of the veggie toppings- but the toppings aren’t for everyone! (half of my family passed on them!) But those homemade croutons! 10/10 recommend!

Cheeseburger Soup

Yes, cheeseburger - with all of its goodness - in a soup. And it is delicious, trust me!

Servings: 6 -8 servings

Ingredients

  • INGREDIENTS:
  • 1 pound ground beef
  • one large onion diced
  • 2 or more cloves of garlic minced
  • 1 medium/large russet potato peeled and diced
  • 6 cups beef broth
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 tsp salt or more to taste
  • pepper to taste
  • 1 Tablespoon Worcestershire sauce
  • 1/2 cup sour cream
  • 8 oz cheese grated (I use cheddar)
  • TOPPINGS:
  • Iceberg lettuce chopped
  • tomato chopped
  • raw red onion chopped
  • pickles chopped

Instructions

HAMBURGER BUN CROUTONS:

  • Take a few hamburger buns and cut them into cubes. Drizzle lightly with oil, then sprinkle with garlic salt.
  • Bake at 400° F until toasty, 5-10 minutes.

  DIRECTIONS:

  • In a large pot cook the onion and ground beef over medium-high heat, stirring often. Add the garlic and cook for another minute.
  • Add the potatoes, beef broth, salt and pepper.
  • Bring to a simmer and cook until potatoes are soft.
  • In a separate frying pan, melt the 4 Tablespoons of butter. Then add the 4 Tablespoons of flour and whisk together. Season with a tad more salt. When a late forms. Turn off the heat and add the paste (called a roux) to the soup. Stir together and bring to a simmer. Soup will thicken.
  • Remove from heat and add the sour cream and cheese. Stir to combine.
  • Serve soup with desired toppings and croutons.
