Coconut Almond Granola

Once you smell it, you'll be hooked! Made with good-for-you nuts and seeds and delicious coconut. This stuff is great on yogurt, with milk, or just plain!

Ingredients

  • 1 cup raw almond chopped or slivered, pulsed in the blender
  • 3 cups old fashioned oats
  • 1/3 cup coconut sugar
  • 1/2 tsp salt
  • 1/3 cup chia seeds
  • 1/4 cup shredded coconut flakes
  • 1/3 cup melted coconut oil
  • 1/3 cup honey
  • 1/2 tsp vanilla extract

Instructions

  • Mix together the almonds, oats, coconut sugar, salt, seeds, and coconut flakes.
  • In a separate bowl combine the coconut oil, honey, and vanilla extract.
  • Toss the honey mixture with the dry ingredients. Spread them evenly on a sheet pan lined with parchment paper. 
  • Bake at 350° F for 12-15 min, checking often.
  • When done, let it cool. Store it in a container for up to two weeks.

  1. the ingredients list coconut sugar, the recipe directions say coconut flakes? which one?although I assume flakes as title is coconut almond granola /just double checking?

      Carolyn, thanks so much for saying something. That was a typo on my part. The recipe includes both coconut sugar and coconut flakes. I just fixed it on the page! Thanks for reaching out!
