Crockpot Pork Chops and Mashed Potatoes

Ingredients
Pork Chops
- 2-3 pounds pork chops (however thick you like yours cut will work)
- 3 cans/boxes cream of mushroom soup
- 1/4-1/3 cup Worcestershire sauce
- 1-2 T olive oil, for searing
- salt and pepper to taste
Crock Pot Mashed Potatoes
- 3 pounds baby red potatoes (about 1-2 inch wide)
- 4 T butter
- 4 oz cream cheese
- 1/4 cup sour cream
- 1/2 to 1 cup milk depending on how creamy you like it
- salt and pepper to taste
Instructions
Pork Chops Instructions
- Heat a large skillet over high heat and pour in a tablespoon or two of olive oil.
- Season pork chops on both sides with salt and pepper.
- Sear the pork chops, about 30 seconds on each side. Be careful not to cook all the way through.
- Remove pork chops from pan and transfer them to a crockpot.
- Top pork chops with cream of mushroom soup and Worcestershire sauce.
- Put the lid on, and turn the heat to either low for about 6 hours, or high for about 3 hours.
- Serve with mashed potatoes and the mushroom soup as gravy.
Crockpot Mashed Potatoes Instructions
- Fill a crockpot with 3 pounds of potatoes (washed, skins left on) and nothing else.
- Put the lid on and cook on low for 6 hours or high for 3 hours.
- Mash potatoes roughly, then add the butter, sour cream, cream cheese, and milk. Mix with a handheld mixer until smooth and creamy.
- Season to taste at the end. These are easy and delicious when served with the crockpot pork chops!
