FRUIT PIZZA

If you haven’t had this good old fruit pizza, you are in for a treat! Delicious cookie crust, smooth vanilla frosting, and colorful fruit make this pizza one for the books. Feel free to get creative with the fruit! It’s what makes it fun!

If you haven’t had this good old fruit pizza, you are in for a treat! Delicious cookie crust, smooth vanilla frosting, and colorful fruit make this pizza one for the books. Feel free to get creative with the fruit! It’s what makes it fun! 

DOUGH:
*1 cup softened butter
*1 1/3 cup cane sugar
*2 large eggs
*2 teaspoons vanilla extract
*3 cups flour
*2 teaspoons cream of tartar
*1 teaspoon baking soda
*1/2 teaspoon salt

DIRECTIONS: 
1. Preheat the oven to 350° F. Spray a cookie sheet (26×18 inch) with non-stick spray. 
2. In a large bowl, cream together the butter and sugar until smooth. Mix in the eggs, and vanilla. Add the dry ingredients and mix until combined.
3. Drop the dough onto the cookie sheet, spreading it out and using your hands to push it down flat. Using a rubber spatula, push the dough away from the outer inch of the pan. (This allows the giant cookie to have room to spread as it cooks).
4. Bake the dough for 10-12 minutes or until very lightly browned. Don’t overbake! 
5. Let it cool, then frost it with frosting (recipe below) and decorate with fruit. 
6. *optional step- To prevent fruit from drying out, brush the fruit pizza with a glaze made from 2 Tablespoons apricot jam +1 teaspoon water. Warm the mixture in the microwave for 30 seconds. Then *lightly* spread on fruit

FROSTING:
*8 oz. cream cheese softened
*4 Tablespoons butter, softened
*3 cups powdered sugar
*1 teaspoon vanilla extract (it is also yummy to add either 1 tsp almond extract or 1 tsp lemon extract)

DIRECTIONS:
1. Beat the cream cheese and butter together with an electric mixer until smooth.
2. Add the vanilla and mix.
3. Gradually add the powdered sugar and mix until you have reached your desired consistency. (If you would like it thicker, add more powdered sugar. If you prefer it thinner, add a teaspoon at a time of milk).
