This fried rice is a family favorite and my kids make sure to finish every last bite! It is so good! I often serve this as the meal, and sometimes we will eat it with teriyaki chicken and roasted broccoli. It’s such a yummy dish!

I cooked the rice in the Instant Pot for 3 minutes, natural pressure release. One part rice, one part water. I know this may seem super unauthentic but I feel this works best with parboiled rice rather than sticky rice. So I recommend using uncle Ben’s parboiled rice. Use whatever you like though. Enjoy!!
Note: feel free to half the recipe, I make a large batch for my family of seven.
Ham Fried Rice
Who doesn't love some good ham fried rice? This recipe is great for those need-dinner-fast nights, but includes all the same deliciousness!

Ingredients
- 4 T butter
- 1 cup diced onion
- 1 cup diced green cabbage
- 6 oz diced ham
- 2 eggs and salt and pepper to taste
- 1/4 cup soy sauce
- 1 tsp sesame oil
- 1/2 cup frozen peas
- 1/2 cup corn
- 6 cups cooked rice
- sliced green onions for garnish
Instructions
- Add butter, cabbage, and onion to a skillet over heat. Cook until onion is translucent.
- Add diced ham and then make room in the middle of the pan for the cracked eggs (see video). When the eggs are 50% cooked, scramble them.
- Add cooked rice and mix.
- Add the soy sauce, sesame oil, peas, corn, and green onions. Cook until all mixed together and frozen vegetables are cooked.
This is the best recipe ever. I always want Fried Rice but have a hard time finding a good one. This is the best one ever!
