I saw this fantastic demonstration on my friend Renae’s page at @thefeatherednester (she has awesome recipe demo’s on her Instagram stories!) so I have made it several times and we all love it! Such a great, easy meal! I paired it with brown rice and steamed broccoli and it was a delicious dinner! The chicken comes out SO tender and yummy!

Course: Main Course
Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 6

Ingredients

  • 3/4 cup ketchup
  • 1 cup crushed pineapple
  • 3 T packed brown sugar
  • 1/3 cups soy sauce
  • 1 clove minced garlic
  • juice from one lime
  • 8-10 boneless skinless chicken thighs, frozen (about 2.5 pounds)
  • 2 T cornstarch for thickening
  • 1/4 cup water
  • green onions and sesame seeds for garnish optional

Instructions

  • Add ketchup, brown sugar, pineapple, soy sauce, lime juice, and garlic to the instant pot. Mix well.
  • Add the chicken thighs to the pot.
  • Put the lid on and set to manual high pressure for 12 minutes (10 minutes if using fresh chicken). Don't forget to seal the steam valve.
  • When it is done cooking, do a Natural Pressure Release (NPR) for at least ten minutes. Then do a quick release.
  • Remove chicken from pot. You can leave whole or shred. Let the juices stay in the pot to thicken.
  • Add the cornstarch to the water and mix well. Add to the pot.
  • Turn the “Sauté” function on, and mix the cornstarch mixture into the sauce. Let simmer while stirring often until thickened. About 5-10 minutes.
  • Pour sauce over chicken and serve with rice. Garnish with green onions and sesame seeds.

    1. Hi Nick, thank you for pointing that out! The prep time should be just 10 minutes. I have updated the recipe. How did it turn out for you?

  1. Have you tried this in the slow cooker? Do I need to make any adjustments? Or could I let it sit after the natural pressure release for an hour or two and then finish it up?

    1. Hi Marietta, yes! Cook on High for 6 hours or 4 hours on low, until the chicken shreds easily. You could also let it sit after natural pressure release.

  2. Wow, this recipe looks amazing! I’ve never thought to pair pineapple with chicken in the Instant Pot before, but I’m definitely going to give it a try. Can’t wait to see how it turns out!

  3. I just made this recipe for dinner and it was a huge hit with my family! The combination of sweet and savory flavors was amazing. I also appreciated how easy it was to prepare and cook. We’ll definitely be making this again!
