INSTANT POT PINEAPPLE CHICKEN

I saw this fantastic demonstration on my friend Renae’s page at @thefeatherednester (she has awesome recipe demo’s on her Instagram stories!) so I have made it several times and we all love it! Such a great, easy meal! I paired it with brown rice and steamed broccoli and it was a delicious dinner! The chicken comes out SO tender and yummy!

Instant Pot Pineapple Chicken

If you're looking for a mouthwatering chicken dish that doesn't take a lot of time - this is it. So delicious and simple!

Ingredients

  • 3/4 cup ketchup
  • 1 cup crushed pineapple
  • 3 T packed brown sugar
  • 1/3 cups soy sauce
  • 1 clove minced garlic
  • juice from one lime
  • 8-10 boneless skinless chicken thighs, frozen (about 2.5 pounds)
  • 2 T cornstarch for thickening
  • 1/4 cup water
  • green onions and sesame seeds for garnish optional

Instructions

  • Add ketchup, brown sugar, pineapple, soy sauce, lime juice, and garlic to the instant pot. Mix well. 
  • Add the chicken thighs to the pot.
  • Put the lid on and set to manual high pressure for 12 minutes (10 minutes if using fresh chicken). Don't forget to seal the steam valve.
  • When it is done cooking, do a Natural Pressure Release (NPR) for at least ten minutes. Then do a quick release.
  • Remove chicken from pot. You can leave whole or shred. Let the juices stay in the pot to thicken.
  • Add the cornstarch to the water and mix well. Add to the pot.
  • Turn the “Sauté” function on, and mix the cornstarch mixture into the sauce. Let simmer while stirring often until thickened. About 5-10 minutes.
  • Pour sauce over chicken and serve with rice. Garnish with green onions and sesame seeds.
