Pasta Salad

Perfection is the enemy of completion! I almost didn’t post this salad recipe because this photo (it’s fine) isn’t my favorite. It was taken in a hurry on my porch right before sunset with my iPhone and the type of parmesan cheese I had to use doesn’t look as pretty’s as the type I usually use. Annnd I didn’t have sesame seeds to garnish it with. Those are pretty dumb reasons not to share this (amazingly delicious) salad recipe with you. But the perfectionist in me defaults towards inaction when perfection isn’t an option. . . Can anyone else relate? Should we all go to therapy now?

Anyway, if you’ve been here for five seconds, you probably already know that despite my yearning for perfection- I’m actually pretty average. And ya know what? I like it here! my photos might be average and I’m not the most professional food blogger on earth but I’m here and I’m trying and learning and I’m doing what I love to do! I hope you love what you’re doing too!

The recipe though- it’s a home run. (I hate to brag but I have some solid non-average recipes posted on this page!) Even though the picture doesn’t do it justice, this pasta salad is awesome for a party or a baby shower or just weeknight dinner. We all love it!

Pasta Salad

This salad is a home run. Awesome for a party, a baby shower or just weeknight dinner. Hope you love it as much as we do!

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 8 -10 servings

Ingredients

  • INGREDIENTS:
  • 1 pound of bow tie pasta cooked
  • 1 bag 6 cups of baby spinach
  • 1 can of mandarin oranges drained
  • 2-3 green onions thinly sliced
  • 1/2 cup of Craisins
  • 1 cup of grapes sliced in half
  • 1/2 cup slivered almonds or roasted cashews
  • 1/2 cup of parmesan cheese
  • Sesame seeds to garnish
  • DRESSING:
  • 1/2 cup avocado oil
  • 1/3 cup red wine vinegar
  • 1/3 cup teriyaki sauce
  • 3 Tablespoons sugar or pure maple syrup
  • Salt and pepper to taste

Instructions

  • Combine dressing ingredients and blend in a blender or a jar with an immersion blender.
  • Cook your pasta to al dente. Drain and cover warm pasta with the salad dressing. Cover and let cool, if you have time refrigerate overnight so it can marinate in the dressing. 
  • Combine dressing ingredients in a separate bowl or jar. Mix well. 
  • Combine the cold pasta with the rest of the ingredients and toss. Serve immediately.
