Pumpkin Cranberry Breakfast Cookies
Don't let the ingredients fool you. These cookies are straight-up delicious! It's nice to have a treat without all the refined sugar sometimes.

Ingredients
- 1/2 cup coconut oil
- 1/3 cup honey
- 1/2 cup pumpkin puree
- 2 eggs beaten
- 1 cup old fashioned oats
- 1 cup quick oats
- 2/3 cup dried cranberries
- 2/3 cup pumpkin seeds
- 1/4 cup ground flax seeds
- 1/2 tsp salt
- 1 tsp pumpkin pie spice
Instructions
- Preheat oven to 350° F and combine ingredients in a bowl.
- Drop 1/4 cup of batter onto a greased cookie sheet and flatten out with a spatula.
- Bake 15 - 20 minutes and let cool.
