I make it my duty to test out recipes for treats that don’t use refined sugars. I feel good about eating these pumpkin, cranberry, breakfast cookies! They are made with all natural ingredients and they are straight-up delicious! 



Pumpkin Cranberry Breakfast Cookies

Don't let the ingredients fool you. These cookies are straight-up delicious! It's nice to have a treat without all the refined sugar sometimes.

  • 1/2 cup coconut oil
  • 1/3 cup honey
  • 1/2 cup pumpkin puree
  • 2 eggs beaten
  • 1 cup old fashioned oats
  • 1 cup quick oats
  • 2/3 cup dried cranberries
  • 2/3 cup pumpkin seeds
  • 1/4 cup ground flax seeds
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice


  • Preheat oven to 350° F and combine ingredients in a bowl.
  • Drop 1/4 cup of batter onto a greased cookie sheet and flatten out with a  spatula. 
  • Bake 15 - 20 minutes and let cool.
