Yummy. Easy. Healthy. And a great way to incorporate quinoa!
Ingredients
- 3 cups quinoa (cooked in broth, not water)
- 1/2 cup salsa
- handful of lettuce
- salt and pepper
- 1/2 cup black beans
- 1/2 cup corn
- 2/3 cup quinoa mixture
- cooked chicken breasts about half a chicken breast
Garnish with
- tomato
- avocado
- green onion
- cilantro
- a little more sour cream
Instructions
- Cook quinoa. These are my two favorite methods using the Instant Pot:1. Combine 2 parts quinoa, 3 parts chicken broth and cook on the "rice" cycle.2. Combine 2 parts quinoa and 3 parts chicken broth and cook for 1 minute, manual high pressure.
- Assemble the rest of the ingredients to your liking!
