Tuscan Tortellini Soup

Whether it’s soup season or not, this soup hits the spot. This is one of my favorite comfort food recipes. It comes together in just a few minutes, and it’s packed with flavor. You will love it!
INGREDIENTS:
- 1 medium-sized yellow onion, diced
- 2 Tbsp avocado oil (or butter)
- 2 cloves garlic, minced
- 1, 28 oz can diced tomatoes
- 4 cups chicken broth
- 1, 15 oz can white beans (like cannellini or great northern)
- 1 tsp salt
- 1/4 tsp pepper
- 1 Tbsp Italian seasoning
- 9 oz refrigerated tortellini
- 2 cups fresh spinach
- 1 cup heavy cream (optional)
DIRECTIONS:

Sauté onion in oil. When translucent, add garlic and cook another minute.

Add tomatoes, broth, seasoning, beans, and pasta.

Cook covered for 3-5 minutes or until pasta is soft.

Add spinach and cream at the very end.

Garnish with Parmesan cheese if you want!
