Tuscan Tortellini Soup

  INGREDIENTS:

  • 1 medium-sized yellow onion, diced
  • 2 Tbsp avocado oil (or butter)
  • 2 cloves garlic, minced
  • 1, 28 oz can diced tomatoes
  • 4 cups chicken broth
  • 1, 15 oz can white beans (like cannellini or great northern)
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 Tbsp Italian seasoning
  • 9 oz refrigerated tortellini
  • 2 cups fresh spinach
  • 1 cup heavy cream (optional)

  DIRECTIONS:

  1. Sauté onion in oil. When translucent, add garlic and cook another minute.

  2. Add tomatoes, broth, seasoning, beans, and pasta.

  3. Cook covered for 3-5 minutes or until pasta is soft.

  4. Add spinach and cream at the very end.

  5. Garnish with Parmesan cheese if you want!
