These super soft butterscotch cookies are divine! The butterscotch flavor is very mild with no added butterscotch chips or extract. (Feel free to add some if that’s what you like!) @stirring_it_up_with_pam brought my family a plate of these cookies along with a delicious dinner when we were sick back in April. Our response was “woah…. these are good!” Pam was so kind to come over to my kitchen to make them with me. She is the BEST! Here is her recipe!

Butterscotch Cookies
Super soft and absolutely deductible. These really bring the "wow" factor.

Ingredients
- 2 sticks softened butter (I use salted)
- 1.5 cups brown sugar packed
- 1 egg
- 3 T heavy cream
- 1 tsp vanilla
- 1/2 tsp salt
- 1 tsp baking soda
- 3 cups flour
Instructions
- Preheat your oven to 375° F.
- Cream together butter and brown sugar.
- Add the egg, heavy cream, and vanilla. Beat together for a couple of minutes with a handheld mixer or in a stand mixer.
- Add the dry ingredients and mix together just until you can no longer see streaks of flour. Don’t overmix.
- Roll into balls, either 2 or 3 Tablespoon size. Bigger balls will take slightly longer to bake than smaller dough balls.
- Arrange dough balls on a greased baking sheet and bake for 10 minutes until the edges start to turn a golden color.
- Remove from oven and enjoy!

These are so soft and deceptively flavorful. I really like their texture too. If you’re wanting a huge butterscotch flavor then add the chips or extract like amber suggests but honestly these are such a great cookie as is!
