As a foodie, I would probably never advertise recipes that call for canned chicken! It’s not that I’m above canned chicken- it’s just that it’s usually a last resort for when you’re out of time. But here’s the thing; We’re all out of time sometimes, and life happens, and it’s great to have something decent to feed our families in just a few minutes. Enter canned chicken! I learned that if you add enough taco seasoning to the chicken, then it’s actually pretty yum! And in these burritos, baked in a crispy tortilla with a cheesy filling, it’s downright delicious and I am pretty sure you AND your kids will love it!

Cheesy Chicken Baked Burritos
These burritos will be your saving grace on those empty fridge nights. Simple ingredients and downright delicious.

Ingredients
- 2 cans chicken
- 2 T taco seasoning
- 6 burrito-sized flour tortillas
- 3/4 cup sour cream
- 1 cup grated cheese
- coconut oil spray/cooking spray
- salt to lightly sprinkle on top
Instructions
- Preheat oven to 400°F.
- Open two cans of chicken and dump Into a skillet over medium-high heat on the stove.
- Add the taco seasoning and stir to combine and get warm.
- Divide chicken between 6 tortillas, then add 2 Tablespoons sour cream and 3 Tablespoons grated cheese per tortilla.
- Fold up tortillas into burritos as shown in the video above and place on a prepared baking sheet.
- Spray each burrito lightly with cooking spray, then sprinkle lightly with salt.
- Bake for 10-15 minutes or until they have reached the golden color you prefer.
These are so good and so easy! I have made these mutliple times for my family, and they are always a big hit. I change it up from time to time and add black beans or rice or cilantro or whatever feels right and sounds good. They never disappoint!
