As a foodie, I would probably never advertise recipes that call for canned chicken! It’s not that I’m above canned chicken- it’s just that it’s usually a last resort for when you’re out of time. But here’s the thing; We’re all out of time sometimes, and life happens, and it’s great to have something decent to feed our families in just a few minutes. Enter canned chicken! I learned that if you add enough taco seasoning to the chicken, then it’s actually pretty yum! And in these burritos, baked in a crispy tortilla with a cheesy filling, it’s downright delicious and I am pretty sure you AND your kids will love it!
Cheesy Chicken Baked Burritos
Prep: 10 min Cook: 10-15 min Total Time: 25 min
Servings: 6
These burritos will be your saving grace on those empty fridge nights. Simple ingredients and downright delicious.
INGREDIENTS:
- 2 cans chicken
- 2 Tablespoons taco seasoning
- 6 burrito-sized flour tortillas
- 3/4 cup sour cream
- 1 cup grated cheese
- coconut oil spray/ cooking spray
- salt to lightly sprinkle on top
DIRECTIONS:

Preheat oven to 400°F.

Open two cans of chicken and dump Into a skillet over medium-high heat on the stove.

Add the taco seasoning and stir to combine and get warm.

Divide chicken between 6 tortillas, then add 2 Tablespoons sour cream and 3 Tablespoons grated cheese per tortilla.

Fold up tortillas into burritos as shown in the video above and place on a prepared baking sheet.

Spray each burrito lightly with cooking spray, then sprinkle lightly with salt.

Bake for 10-15 minutes or until they have reached the golden color you prefer.
