Anyone else craving a throw-together fresh salad? I just threw a bunch of stuff into a bowl and called it lunch! The dressing is a yummy combo I hadn’t made before and it turned out delicious. Tip: I always dip a piece of lettuce in my dressing after making it for the first time to make sure it’s good before tossing it in the salad.

I'd Eat that Salad
A savory mixture of chicken and veggies with a creamy dressing that compliments every bite. The best part is, it's incredibly easy to throw together! I'd eat that.

Ingredients
Salad
- handful of spinach
- 2 handfuls of arugula
- celery, chopped
- cucumbers, sliced
- grape tomatoes, halved
- red onion, diced
- 1/2 avocado, sliced
- 1/2 cooked chicken breast, cubed
- pumpkin seeds
Dressing
- 3 T mayo
- 1 T avocado oil
- 1 T rice vinegar
- sprinkle of onion powder
- sprinkle of dried parsley
- pinch of salt
- 1/2 tsp mustard
- 2 tsp pure maple syrup
Instructions
- 1. Chop up desired amount of vegetables and chicken. 2. Combine salad ingredients in a large bowl. 3. Combine dressing ingredients in a separate bowl or jar. Mix well. 4. Drizzle the dressing on the salad.
