Anyone else craving a throw-together fresh salad? I just threw a bunch of stuff into a bowl and called it lunch! The dressing is a yummy combo I hadn’t made before and it turned out delicious. Tip: I always dip a piece of lettuce in my dressing after making it for the first time to make sure it’s good before tossing it in the salad.

I'd Eat that Salad

A savory mixture of chicken and veggies with a creamy dressing that compliments every bite. The best part is, it's incredibly easy to throw together! I'd eat that.

Ingredients

Salad

  • handful of spinach
  • 2 handfuls of arugula
  • celery, chopped
  • cucumbers, sliced
  • grape tomatoes, halved
  • red onion, diced
  • 1/2 avocado, sliced
  • 1/2 cooked chicken breast, cubed
  • pumpkin seeds

Dressing

  • 3 T mayo
  • 1 T avocado oil
  • 1 T rice vinegar
  • sprinkle of onion powder
  • sprinkle of dried parsley
  • pinch of salt
  • 1/2 tsp mustard
  • 2 tsp pure maple syrup

Instructions

  • 1. Chop up desired amount of vegetables and chicken. 
    2. Combine salad ingredients in a large bowl. 
    3. Combine dressing ingredients in a separate bowl or jar. Mix well. 
    4.  Drizzle the dressing on the salad.
