And if you know me, I’m a bit of a cookie person (that’s a nicer way of saying I’m a cookie snob) and I have done lots of cookie taste testing over the years. Of all the soft cookies out there, this is my favorite recipe! They are SO good! Enjoy!

And if you know me, I’m a bit of a cookie person (that’s a nicer way of saying I’m a cookie snob) and I have done lots of cookie taste testing over the years. Of all the soft cookies out there, this is my favorite recipe! They are SO good! Enjoy!

Note: I quite often bake with coconut sugar as a substitution for white sugar and brown sugar, because coconut sugar has a lower glycemic index and doesn’t cause such a huge insulin response when you eat cookies (or cakes, brownies, etc.) baked with it. This surprisingly doesn’t affect the taste or texture, but it does turn the color a slightly darker brown. 
I tested this recipe with coconut sugar and it was still just as delicious! 

 

Incredibly Soft Chocolate Chip Cookies

Ingredients

  • 2 sticks room temp butter (salted)
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups chocolate chips (I prefer milk chocolate in this recipe)

Instructions

  • Preheat oven to 350°F.
  • Combine room temperature butter, brown sugar, white sugar, eggs, and vanilla in a stand mixer or a bowl with a handheld electric mixer. Beat for a solid three minutes.
  • Add flour, baking soda, baking powder, and salt and mix until combined but don’t over mix at this point.
  • Add chocolate chips and gently mix in.
  • Roll into balls, about 2 Tablespoon-size, and place 12 dough balls onto a greased cookie sheet, evenly spaced.
  • Bake for 10-11 minutes until edges are set. Don’t overbake!
  • Let cool on the baking sheet for about 3 minutes, then transfer to a wire rack to finish cooling.

    1. I actually don’t love using coconut sugar anymore. I prefer white and brown! But it you do use coconut sugar just use the same amounts for both sugars.

    The best recipe I’ve gotten for a chocolate chip cookie since my grandmother made them. An quite honestly I was blessed to at least have those made for me a handful of times before she had passed away. The consistency of the cookie dough is soft and creamy, texture is spot on! Not only is it softer than you amcan imagine, it literally just melts in your mouth! The taste of them isn’t to rich it’s the perfect cookie to bake for holidays or any day!

    Bravo hats off to you!

I think every single person told me how amazing they were. They were so good and everyone had multiples that I wasn’t able to snag one 🥲. Looks like I need to make more tomorrow!     Amber’s brown butter cookies and sourdough cookie bars are a family favorite. They are worth the time to make. But these cookies are a delicious and quick cookie for when you don’t have time to brown the butter. Everyone raved about how soft they were. We didn’t have milk chocolate – so we did a mix of white and semi sweet. Yum!!!

    This is a great ratio! I sometimes add in nuts or shredded coconut to the chocolate and I sometimes add protein powder and oats to the flour. It’s my way of making them “healthy.”

    AMAZING!!! I have tried so many chocolate chip cookies through my 35+ years of baking never finding just the right one. This cookie is it! I can’t make these without someone asking for the recipe. I always 4x the batch and bag them up in the freezer. When my kids come home from school they look for a bag to take back.

  34. This has been my tried and true recipe for chocolate chips cookies ever since Amber shared these in 2020! I wrote the recipe down on a recipe card and the title is literally “The BEST Chocolate Chip Cookies Ever!” They are the most perfect consistency, absolutely delicious and we make them at least twice a month! Any time I try a different recipe, NOTHING compares! These will be my family’s go to chocolate chip cookie recipe until the end of time!

    I make these cookies every single Sunday and my family is obsessed. My husband argues that they’re better the next day, but they usually don’t last that long. I love them fresh out of the oven. I usually mix them for a bit longer, about 5 minutes and they turn out perfect every time. I have this recipe memorized because I make it so often.     I made these for the first time tonight and they turned out perfect! It was easy to make and I will definitely keep this recipe on hand for a good basic chocolate chip cookie. I was worried I may have undercooked them but after letting them cool a little more they turned out perfectly soft and chewy.

    This is not your typical review, but I feel it might be helpful for somebody out there.

    I gave five stars because I’m confident when I come back and make the recipe as is, it will be just as delicious as our other favorite cookie recipes from Amber (sourdough brown butter, chocolate chip cookies, the butterscotch cookies!!).

    We have been experimenting with using Medjool dates and date sugar to sweeten our desserts for 10 months now. We have yet to try them on an actual cookie recipe as opposed to an energy ball or an energy bar, granola, or something baked that’s a bar or brownie. All of those have turned out great!

    We only changed one thing about the recipe-the sugars. We did everything else exactly according to the recipe. As a replacement for the brown sugar I used Medjool Date paste, and I used date sugar as a replacement for the white sugar. (I know, sort of two changes.)

    For our granddaughters we used semi sweet chocolate chips. For the adults we used chopped unsweetened Baker’s chocolate.

    The cookies held together. They stayed very round and fluffy. The dates usually give enough sweetness, but in this situation, the sweetness was almost too mild. Date sugar can dry out a recipe And I thought that the date paste would make up for that, but it did not. The cookies were on the verge of crumbly.

    With that said… Even with these critiques of our approach at using date paste and date sugar, the underlying flavor and texture was still very good! The granddaughters loved their cookies and were pretty sure that my sweet chocolate chips made up for the lack of sweetness. They gobbled them up, and one exclaimed about how delicious they were!

    For anybody out there wanting to give this a try, we recommend pulling out a little bit of the flower or adding in a little more moisture. Since they were under sweet, And you need more moisture, we might recommend doubling the measurement of the date paste that replaces the brown sugar.

    Again, an unusual review, but we figured maybe somebody else out there might be wondering what we’re wondering when it comes to using other ways to sweeten our treats.

    And now I’m going to eat some leftover green enchiladas from one of Amber’s other recipes!! Yum!! (The cookies are all gone!)

    These cookies were so soft and delicious and extremely easy to make. I’m not much of a baker and usually struggle with cookie recipes that call for only butter as opposed to Crisco or a combination of Crisco + butter. The butter only cookies always come out flat for me for some reason but these turned out perfectly! My husband and kids all loved them too. We’ll definitely be making them again!

    Okay, these were amazing! I’m somewhat of a cookie connoisseur, and I knew that I had to try them, but was thinking that they couldn’t be that different than other recipes I have tried. But, surprisingly, they were exceptionally soft and really delicious! Maybe the 3 minutes of blending helped with that, but whatever it was, we will be making these again very soon! Thank you, Amber!     I tend to prefer chewy cookies to soft ones, but I really enjoyed these!! I wasn’t sure how many cookies a batch made (would love that info added! 🙂 Saw 12 listed but knew that couldn’t be right, haha.) so I doubled it for a baptism I was helping with. I don’t think people minded the extra cookies, haha, but it did make a lot! I was nervous about making a new recipe (a double batch no less!) for people, but they were loved and delicious! Would definitely make again! Thanks for the yummy recipe!

  57. The recipe says the yield is 24 cookies but instructions only have 12. Do I need to double it to get 24 or is it just an oversight?

  58. They taste good but how do you make them soft cake like? Mind puffed up in the oven and when cooled they drop almost flat. Please help? I like a puffy cake like cookie. Maybe another recipe?

    My husband is selective with his cookies, and with a baker in the family, it’s hard to top her cookies. I made this and the very first batch I had to swat my husband out of the kitchen to keep him from eating them all as soon. As they came out of the oven. Best cookies ever!

        1. Hi Myra, I don’t love baking desserts with coconut sugar. I think cookies turn out so much better with cane sugar! I have heard many people have success using gluten-free flour but don’t have any personal experience with this so I can’t recommend it.

    Giving 5 stars for taste.
    All my cookies completely flattened out. Why is this? I used 5 different types of cookie trays all with parchment paper still all flatten out after taking them from oven. Don’t understand.

    1. Hi Lori, there could be a few reasons why they turned out flat. Were your rising agents fresh? Did you add enough flour? You may need different amounts of flour depending on your elevation, climate, and humidity. You could also try chilling the dough before baking.

  62. The enormous amount of butter this recipe calls for is what keeps this cookie soft but it does not have enough vanilla essence in it to cut down that raw egg flavor. This is just a bleh recipe with a meh taste.

  63. It would be a lot easier to use 1 1/2 c. white sugar and molasses, instead of having to buy brown sugar. That way you always have fresh brown sugar and don’t have a bag of it getting hard in the pantry. To make 1 c. light brown sugar, combine 1 c. white sugar & 1 T. molasses. To make 1 c. dark brown sugar, combine 1 c. white sugar & 2 T. molasses. When making something that’s mixed together, like cookies, it isn’t necessary to pre-mix the sugar and molasses since the 2 ingredients will mix in the bowl. If making brown sugar to sprinkle on oatmeal, etc., premix w/ a fork or in a small food processor.

    Just made these and they are delicious! I used dark brown sugar with white sugar, since that is what I had in house, and they tuned out great.

    1. Hi Zemriah, the cookies shouldn’t be raw. Every oven is different so you may need to bake them a little bit longer than the recipe says! Hope that helps.
