This is a salad I whipped up with ingredients that needed to be used and it created a surprisingly happy accident! It is so full of flavor and crunch, and is filling enough to be eaten alone (thanks to the bacon, croutons, avocado, pine nuts, and goat cheese!). The dressing is light and everything all together is a party in your mouth! You’ll love it!

Sweet and Savory Green Salad

Ingredients
Salad Ingredients
- lettuce of choice
- buttered and toasted bread, cut into bite-sized pieces (or croutons)
- celery, diced
- red onion, diced
- Asian pear or apple, chopped
- pine nuts
- goat cheese
- bacon, cooked and crumbled
- avocado, diced
- blueberries
Dressing
- 1/4 cup avocado oil
- 2 T champagne vinegar
- 1 T sugar
- sprinkle of garlic powder
- sprinkle of salt
- 1/4 tsp mustard powder
Instructions
- Prepare the lettuce in a bowl, and leave the toppings to the side while you make the dressing.
- To make the dressing, combine all ingredients and blend with an immersion blender (or in a traditional blender)
- When you are ready to eat, pour the dressing over the lettuce, toss it, and then add the toppings and give it another light toss.
